Creamy Garlic Shrimp and Scallops 2 tbs cooking oil 2 tbs butter 4 gloves garlic minced 1/4 cup heavy cream 1/4 cup dry white wine or broth Hot sauce (optional) .25 lbs of Scallops .25 lbs of Shrimp Add oil to pan on medium high heat. Once hot, add scallops. Cook until opaque. Set aside. Add shrimp, cook until pink then set aside. Reduce heat to just below medium, add butter and garlic, cook until garlic is fragrant (about a min or so). Add wine or broth. If wine, wait for it to reduce to about half. Add cream and let simmer and combine. Throw seafood back in to heat up. Serve. Over 2 years in and still going strong. I started this journey out with the hopes that I’d lose weight but not actually believing I would stick with it because let’s get real how many people actually stick with a diet more than a hot second?? Well that “diet” is now just my new lifestyle and I couldn’t be happier with the choices I’ve made these past few years. Keto is different than anything else I’ve ever tried which is why I’ve been able to sustain and keep it as my lifestyle. . . For those new here I was not always overweight. In fact I grew up as an athlete and being healthy and active was always important to me. Slowly but surely after dating my husband we both packed on the “love chub”. We stopped exercising and literally ate out all the time, not thinking about how bad any of our food choices were and consumed more alcohol then I’d like to admit. Well that resulted in over 100lb weight gain between the 2 of us and then add 2 almost back to back pregnancies of weight gain I was spiraling and was super unhappy with where I was. After my second child is when I committed to change and here we are today. . . My biggest regret was not taking photos and measurements when I first started. That photo on the left was after I had already lost a good amount of weight. If you’re just starting out on this journey be sure to Take photos, take photos, take photos!! I swear they are the minds best motivation when you need something to help you to continue on your journey. The scale isn’t always the answer. Be sure to always remember your why because that’s why you started down this journey and remember you don’t have to know everything to get started. You got this!! I baked it in an 8x8 lined with parchment paper. Once done I removed from the oven and let the cake cool. Once cooked I removed the parchment paper and cake from pan and then added just the cake back into it. I then poked holes in the cake using the back of a wooden spoon.⁠ .⁠ I took 1/2 cup unsweetened almond milk, 1/2 cup heavy cream, and 1/2 cup half&half and mixed together. I then poured it over the entire cake letting it soak it all up! I then covered and put in the fridge to cool.⁠ .⁠ While the cake was cooling I prepared a frosting using 1/2 cup heavy cream, 2oz cream cheese, and 2 tbsp allulose blend sweetener. Mix until thick and creamy. Top cake with frosting and sprinkle with cinnamon! I baked it in an 8x8 lined with parchment paper. Once done I removed from the oven and let the cake cool. Once cooked I removed the parchment paper and cake from pan and then added just the cake back into it. I then poked holes in the cake using the back of a wooden spoon.⁠ .⁠ I took 1/2 cup unsweetened almond milk, 1/2 cup heavy cream, and 1/2 cup half&half and mixed together. I then poured it over the entire cake letting it soak it all up! I then covered and put in the fridge to cool.⁠ .⁠ While the cake was cooling I prepared a frosting using 1/2 cup heavy cream, 2oz cream cheese, and 2 tbsp allulose blend sweetener. Mix until thick and creamy. Top cake with frosting and sprinkle with cinnamon! [3g] (I gave myself a smaller portion of them with dinner because I couldn’t stop snacking on them while cooking em’ 🤣) * * * * * * * * * I. Can. Not. Get. Enough. Of. These. Lately. Cut Brussels in half length wise (this was two bags worth), throw in a roasting pan, toss with a tiny bit of olive oil, sprinkle with pink salt, garlic salt, and pepper, cut raw bacon into cubes (we used 6 slices) and lay on top of Brussels. Bake 375 for 45min, stir them up, and then 300 for the last 15min. if you like a good mix of REAL crisp and soft like we do! Then pack up into six 1c portions [4g net carbs each!]! Over 2 years in and still going strong. I started this journey out with the hopes that I’d lose weight but not actually believing I would stick with it because let’s get real how many people actually stick with a diet more than a hot second?? Well that “diet” is now just my new lifestyle and I couldn’t be happier with the choices I’ve made these past few years. Keto is different than anything else I’ve ever tried which is why I’ve been able to sustain and keep it as my lifestyle. . . For those new here I was not always overweight. In fact I grew up as an athlete and being healthy and active was always important to me. Slowly but surely after dating my husband we both packed on the “love chub”. We stopped exercising and literally ate out all the time, not thinking about how bad any of our food choices were and consumed more alcohol then I’d like to admit. Well that resulted in over 100lb weight gain between the 2 of us and then add 2 almost back to back pregnancies of weight gain I was spiraling and was super unhappy with where I was. After my second child is when I committed to change and here we are today. . . My biggest regret was not taking photos and measurements when I first started. That photo on the left was after I had already lost a good amount of weight. If you’re just starting out on this journey be sure to Take photos, take photos, take photos!! I swear they are the minds best motivation when you need something to help you to continue on your journey. The scale isn’t always the answer. Be sure to always remember your why because that’s why you started down this journey and remember you don’t have to know everything to get started. You got this!! The path to a healthier life is ahead 🙌🏻 . Sorry for the novel. For those asking for my fasting results swipe on the photo.
